Dutch Oven Peach Cobbler

Happy New Year!

To celebrate today, my wife cooked up a batch of collards, my dad is grilling a batch of ribs, and I am making a peach cobbler in my campfire dutch oven. The recipe is simple:

Dump two 30 oz cans of peaches and juice in oven

Spread a 16oz box of dry cake mix evenly over the peaches

Slice up a half a stick of butter and spread around on top

Cook 40 mins over 8 coals, with 20 coals on top. Rotate oven and lid 1/4 turn every 15 mins.

I'll let you know how it turns out.

UPDATE: Not too bad. It took about 15 mins longer to cook than expected. It was also a bit runnier than I would have liked, so maybe I should strain the peaches some next time. Otherwise, it was great hot with a big scoop of vanilla ice cream on top.

I love dutch oven cooking. I take it with me camping each time we go. Use the same basic recipe but I use apples--call it "dump cake." Try a pineapple upside down cake. Google it. It's great!

Sounds great, but I wouldn't bring anything called "dump" to the shindig today.....
